Egg custard with berries and mascarpone

Serves 4

EGG CUSTARD
200 ml milk (full-cream or 2 per cent)
1 vanilla pod, cut open and seeds removed
3 eggs
1 egg yolk
75 ml sugar
250 g mascarpone cheese

BERRY MIXTURE
250 g fresh berries in season
500 ml (2 c) crushed meringues
mint leaves

EGG CUSTARD
Bring the milk and vanilla pod and seeds to the boil in a saucepan. Whisk the eggs, egg yolk and sugar until pale and creamy.

Slowly add the hot milk to the egg mixture, whisking continuously.

Return the mixture to the saucepan and heat slowly, stirring continuously until the custard thickens (don’t allow to boil).

Remove the vanilla and leave the custard to cool. Add the mascarpone cheese to the cooled custard and mix well.

BERRY MIXTURE
Divide the berries among 4 dishes, scatter the meringues on top and spoon over the custard.

Decorate with mint leaves.
