Recipe: Curried yelowtail

Like snoek, yellowtail is a predator with a coarse texture. It goes well with stronger flavours.

Serves 2
Preparation time: 10 min
Cooking time: 10-15 min
MARINADE

160 ml coconut milk
160 ml plain yoghurt
rind and juice of 1 lemon
1 red chilli, seeded and chopped
10 ml (2 t) garam masala or roasted curry powder
5 ml (1 t) ground cumin
2 ml (½ t) turmeric
1 small onion, finely chopped
30 ml (2 T) fresh ginger, grated
4 cloves garlic, crushed

FISH
2 portions (180 g each) yellowtail or dorado
salt and pepper to taste
Preheat the oven to 220 °C.

MARINADE
Mix all ingredients except the fish, salt and pepper. Place the fish portions in a non-metallic bowl, pour over the marinade ingredients and marinate for at least 15-20 minutes.

TO GRILL
Place a lightly oiled oven pan or baking sheet in the oven for 5 minutes. Arrange the fish portions in the hot oven
pan or on the baking sheet. Season with salt and pepper. Pour over the marinade and grill for 8-10 minutes until just done.

TO SERVE
Serve the fish hot with mashed potato and cucumber and onion sambal.
