Recipe: Quick rice pudding

You can use any kind of rice for this delicious dessert. We used ­basmati which is fragrant and adds an extra dimension to the flavours.

Serves 4
Preparation time: 5 min
Baking time: 25-30 min

250 ml (1 c) uncooked rice
400 ml coconut milk or cream
400 ml full-cream milk
125 ml (½ c) sugar
2 star anise
5 cardamom pods, crushed
1 cinnamon stick
cinnamon sugar to garnish

Wash the rice under running water and put it in a medium-size saucepan along with the coconut milk or cream, milk and sugar. Bring the mixture to the boil and add the star anise, cardamom pods and cinnamon stick.

Reduce the heat and simmer over very low heat until the rice is done. Stir ­occasionally to prevent the rice burning.

Serve the rice pudding in individual bowls and garnish with a sprinkling of cinnamon sugar.
