Bacon and mushroom pasta

Serves 4 to 6
Preparation: 5 min
Cooking: 15 min



  • 300 g pasta

  • 15 ml (1 T) oil

  • 80 g butter

  • 1 onion, chopped

  • 250 g bacon, chopped

  • 250 g mushrooms

  • 300 ml cream

  • handful Parmesan cheese, grated


1 Cook the pasta in a large pot of salted water according to the packet instructions. Drain well.

2 Meanwhile, heat a pan over medium heat. Add the oil, butter, onion, bacon and mushrooms. Cook stirring for 5 minutes or until the bacon is crisp.

3 Add the cream, simmer for 2 minutes or until slightly thickened. Add the pasta and sprinkle the Parmesan over. Stir through. Season with salt and pepper.

Baby marrow ‘pasta’ with bacon and butternut

A low-carb delight to get your healthy eating plan back on track this week.


Makes 4 portions
Preparation time: 15 min
Cooking time: 25 min



  • 200 g butternut cut into medium-sized cubes

  • 250 g lean bacon, chopped

  • 15 ml (1 T) olive oil

  • 1-2 sprigs rosemary, finely chopped

  • 6 baby marrows, sliced lengthways into long ribbons

  • juice of ½ lemon

  • lemon zest to taste

  • 1 small red chilli, finely diced

  • salt and pepper

  • toasted almonds or pine nuts to serve (optional)

  • rocket to garnish


1 Preheat the oven to 200 °C.

2 Arrange the butternut and bacon in an ovenproof dish. Drizzle a little olive oil over and sprinkle with rosemary.

3 Roast for about 25 minutes until the butternut is soft and the bacon crispy. Stir the mixture a fewtimes while cooking.

4 Steam the baby marrow ribbons on high for 1 minute in the microwave or 2 minutes in a steamer, until tender. Set aside.

5 Add the lemon juice and zest to the butternut and bacon. Mix in the chilli and baby marrows. Season with salt and pepper.

6 Sprinkle the toasted almonds or pine nuts over (if using) and garnish with rocket before serving.

Bacon-wrapped chicken with avo and green bean salad

This quick dish will soon become a staple in your LCHF menu.


Serves 4
Preparation: 15 min
Cooking: 20 min


4 boneless chicken breasts
salt and pepper
2 x 250 g streaky bacon
225 g cherry tomatoes
15 ml (1 T) olive oil
1 red onion, sliced
1 sprig of rosemary leaves, finely chopped
300 g green beans, trimmed
15 ml (1 T) balsamic vinegar
2 avocados

Preheat the oven to 220 °C.
1 Season the chicken breasts and wrap 2-3 slices of bacon around each one. Place on a lightly oiled roasting pan and arrange the tomatoes around the chicken. Roast for 15 minutes until the chicken is cooked through, but not dry.
2 Meanwhile, heat the oil in a large pan, add the onion and rosemary and cook gently for 5 minutes until softened.
3 Stir in the green beans and cook for a further 5 minutes. Pour in the balsamic vinegar and cook for 5 minutes, stirring occasionally. Season with salt and pepper.
4 Divide the mixture among 4 plates. Slice the avocados and serve with the chicken and roasted cherry tomatoes.

Creamy bacon potatoes

Cheese and bacon are a match made in heaven in this yummy dish. A perfect fuss-free supper or a yummy side dish for a bigger meal.

Serves 4

Preparation time: 5 min

Cooking time: 40 min

  • 4 large potatoes 

  • 20 ml (4 t) oil 

  • 200 g bacon, diced 

  • 1 onion, halved and sliced

  • 250 ml (1 c) sour cream or crème fraîche

  • 5 ml (1 t) chopped fresh thyme 

  • salt and freshly ground black pepper 

  • 100 ml grated cheddar cheese


 

Preheat the oven to 200 °C.

1  Boil the potatoes in salted water until soft.

Heat the oil in a large pan and fry the bacon until crisp.

3  Add the onion slices and sauté until soft. Remove from the heat and stir in the sour cream or crème fraîche, thyme and season with salt and pepper.

4 Cut a cross into each potato, press to open slightly and spoon the bacon mixture on top.

5 Sprinkle the cheese over the potatoes and bake for a few minutes until  it has melted.

Creamy honey mustard chicken with bacon

Creamy, sweet mustard sauce that’s just perfect in this chicken dish.

Serves 6
Preparation: 10 min
Cooking: 25 min



  • 80 ml (⅓ c) honey

  • 45 ml (3 T) wholegrain mustard

  • 4 garlic cloves, crushed

  • 15 ml (1 T) olive oil

  • salt to season

  • 8 chicken pieces

  • 200 g diced bacon

  • 80 ml (⅓ c) cream

  • 250 ml (1 c) double-cream yoghurt

  • 15 ml (1 T) cornflour mixed with 30 ml (2 T) water

  • handful parsley, chopped


1. In a large dish, combine the honey, mustard, garlic and oil. Season with salt. Coat chicken evenly in the sauce. Set aside.

2. Heat a nonstick pan over medium heat. Fry the bacon until crispy, transfer to a plate. In the same pan, fry the chicken until just beginning to brown on each side.
