Caramel Pudding

A perfect pudding for chilly nights.

Serves: 6-8
Preparation: 10 min
Cooking: 40 min

  •  80 ml (¾ c) brown sugar
  • 300 ml self-raising flour
  • 125 ml (½ c) milk
  • 1 egg
  • 5 ml (1 t) vanilla essence
  • 50 g butter, melted
  • 125 ml (½ c) caramel

SAUCE

  • 250 ml (1 c) brown sugar
  • 30 g butter
  • 500 ml (2 c) boiling water

Preheat oven to 180 ° C. Grease a rectangular baking dish.

1. Mix brown sugar and flour in a large mixing bowl. Whisk the milk, egg, vanilla and melted butter together and pour into the flour. Mix well with a wooden spoon.

2. Fold in the caramel and pour into the prepared baking dish.

3. SAUCE: Sprinkle the sugar over and dot the butter on top. Pour the boiling water over and bake for 40 minutes until cooked. Serve with cream or plain yoghurt.
