Easy tuna couscous

This is a one-dish meal for when you need a quick bite.

  • 15 ml (1 T) olive oil
  • 1 red onion, thinly sliced
  • 2 red peppers, cubed
  • 1 red chilli, chopped
  • 5 ml (1 t) ground cumin
  • 5 ml (1 t) ground coriander
  • 5 ml (1 t) ground cinnamon
  • 300 ml (1¼ c) water
  • 5 ml (1 t) salt
  • 250 ml (1 c) couscous
  • handful parsley, chopped
  • juice of 1 lemon
  • 2 ×170 g can tuna in oil, drained (reserving some of the oil)
  • Fresh coriander leaves to serve
  1. Heat oil in a large pan over medium heat. Fry onions, stirring for 3 minutes until soft. Add peppers, chilli, cumin, coriander and cinnamon and stir-fry for 1 minute.
  2. Add water and salt and bring to the boil. Stir in couscous, turn off the heat and cover with a lid. Leave for 15 minutes until the couscous has swollen. Fluff the couscous with a fork.
  3. Add the parsley, lemon juice, and some of the tuna oil to make it nice and moist, then gently fold to combine.
  4. Add the tuna and season with salt and pepper. Top with coriander leaves just before serving.
