Add some healthy goodness to your pizza with sumptuously sweet butternut.

Serves: 4 to 6
Preparation: 5 min
Cooking: 40 min

  • 1 butternut, peeled, seeded and chopped into pieces
  • 5 cloves garlic in their skins
  • 2 sprigs fresh rosemary
  • olive oil
  • 125 ml (½ c) chicken stock
  • salt and pepper
  • ham (to taste), cut into pieces

  • prebaked pizza bases
  • Parmesan cheese shavings
  • olive oil
  • Preheat the oven to 200 °C.

1. Arrange the butternut pieces in a single layer in a roasting pan, add the garlic and tuck the rosemary beneath the butternut.

2. Pour a little olive oil over and the stock and season to taste with salt and pepper.

3. Roast for about 40 minutes – until the butternut is soft and golden brown – turning after 20 minutes. Remove the herbs and squeeze the garlic flesh out of the skins. To heat the ham up, add it 5 minutes before the butternut is finished baking.

4. TO ASSEMBLE Arrange the topping on the baked pizza bases and top with Parmesan shavings. Sprinkle with a little olive oil.
