Spaghetti bake

A hearty dish bursting with flavour to warm tummies on wintry evenings.



SERVES 6
Preparation time: 15 min
Cooking time: 25-30 min

  • 250 g spaghetti
  • 15 ml (1 T) oil
  • 250 g bacon, diced
  • 2 onions, sliced
  • 250 g mushrooms, sliced
  • 1 yellow pepper, sliced
  • 2 red peppers, sliced
  • 5 gherkins, sliced
  • 4-6 cheese grillers, sliced
  • 250 ml (1 c) sour cream
  • 1 packet (43 g) potato bake
  • salt and freshly ground pepper
  • 60 ml (¼ c) grated Parmesan cheese

1 Heat the oven to 190 °C.

2 Cook the spaghetti in salted water until done.

3 Heat the oil in a saucepan and fry the bacon until crisp. Add the onions and fry until brown.

4 Add the mushrooms and stir-fry until done. Add the peppers, gherkins and griller slices and stir-fry.

5 Mix the sour cream and potato bake with the mushroom mixture. Stir and season with salt and pepper and simmer for a few minutes.

6 Mix the spaghetti with the mushroom mixture, adding a little water if necessary.

7 Spoon the mixture into an ovenproof dish, sprinkle with the Parmesan cheese and bake for 10-15 minutes or until golden brown.
